Did I say 41F? It's supposed to be 51F!!! Since MayBelle and Taffy's kids are a week or more old, I may just bring them out to have a look around!
Taffy's doeling - whom I've tentatively named Snowflake. She's creamy white (like good goat's milk cheese) with brownish spots! Snowflake! She's very sweet and has good structure. I'm eager to see what she looks like in a few months...
The ricotta I made last night. The idea comes from frugality. Is that a word? Anyway. After you make cheese, you let the whey sit overnight to sour a bit more. Then bring it to a boil until it curdles. Let it set, in a cool place until cool, then ladel off the wonderful 'cheese' left. Wonderful. I'll be making lasagne soon! Thank you Junket rennet!
